CARROT CAKE 
2 c. sugar
4 eggs
2 tsp. cinnamon
2 1/2 tsp. baking powder
2 jars of Junior baby food carrots
1 1/2 c. Mazola oil
2 c. plus 2 tsp. flour
2 tsp. baking soda
Pinch of salt

Cream together sugar and Mazola oil. Add eggs, one at a time. In separate bowl mix all dry ingredients. Add to egg mixture. Mix well. Stir in baby food by hand. Bake in 9 x 13 inch pan or 2 (9 inch) cake pans. Bake at 350 degrees for 50 to 55 minutes or until done.

FROSTING:

1 stick butter, softened
1 box powdered sugar
1/8 tsp. almond extract
1 (8 oz.) pkg. cream cheese, softened
1 tsp. vanilla
1/2 c. nuts, chopped

Cream together butter and cream cheese. Add remaining ingredients.

NOTE: This frosting recipe can be cut in half for a 9 x 13 inch pan.
