LEAH'S CARROT CAKE 
1 tsp. salt
2 tsp. cinnamon
4 eggs
2 c. sugar
1 1/2 c. salad oil (Wesson)
2 tsp. baking soda
2 jars Junior size carrot baby food
2 c. flour
1/2 c. chopped nuts or raisins

Prepare 9x13 pan - grease and flour lightly. Mix first 6 ingredients well. Add baby food, flour, and mix well. Fold in nuts. Bake at 350 degrees for 30-40 minutes. Cool on rack, then frost.

FROSTING:

8 oz. cream cheese
1 lb. confectioners sugar (4X)
2 tsp. vanilla
1 stick butter

Beat until fluffy. Frost cake when cool and sprinkle with 1/2 cup chopped nuts if desired.
