POLYNESIAN CAKE 
2 c. sugar
2 c. flour
1 c. chopped nuts
1 c. corn oil
3 eggs
1 sm. (8 oz.) can crushed pineapple
1 can coconut
2 (7 1/2 oz.) jars baby junior carrots
2 tsp. baking soda
2 tsp. cinnamon
2 tsp. vanilla

Combine all ingredients in bowl, mix with spoon. Grease and flour 9x13 inch pan. Bake at 350 degrees for 50 minutes until toothpick tests clean. Frost cake and sprinkle with coconut.
