EASY CARROT CAKE | |
2 c. flour 1 tsp. salt 2 tsp. baking soda 2 c. sugar 1 (8 oz.) can crushed pineapple with juice 2 tsp. cinnamon 1/4 tsp. nutmeg 3 eggs 3/4 c. oil 2 jars junior baby food carrots 1/2 c. each raisins, nuts, and coconut Mix dry ingredients in a large bowl. Add eggs, oil, crushed pineapple with juice, baby food, raisins, nuts, and coconut. Bake 45-60 minutes at 350 degrees in 9 x 13 inch pan. Frost with cream cheese frosting: 2 c. confectioners' sugar 1 tbsp. orange juice Beat with electric mixer until desired spreading consistency. Top with coconut. |
