EASY CARROT CAKE 
1 1/2 c. flour
2 to 3 tsp. cinnamon
1 1/2 tsp. baking soda
1 to 2 tsp. nutmeg
1/2 tsp. salt
3 c. carrots, grated
1 1/2 c. sugar
1 c. oil
3 eggs, beaten
1 c. walnuts, chopped

FROSTING:

1 (8 oz.) pkg. cream cheese
1 stick butter
2 tsp. vanilla
3 c. powdered sugar

Simply mix all cake ingredients together in a large bowl, no separating necessary. Bake in greased cake pan at 375 degrees for 45 minutes or until sides of cake pull away. I put some walnuts in the frosting too, it's yummy!
