APRICOT FINGERS | |
6 egg whites 2 c. flour (1/2 lb.) 1 tsp. baking powder 1 1/8 c. sugar (divide) 4 egg yolks 2 sticks mazola butter Grated rind of 1 lemon 1 c. nut, chopped Beat 4 egg yolks and 1/2 cup sugar until light and fluffy. Add butter until light and creamy. Fold in flour and baking powder (mixed), 2 tablespoons at a time on slow speed of electric mixer. Spread in greased 15 x 10 x 1 inch pan. Spread apricot preserves mixed with lemon rind over batter. Spread nuts (coarsely chopped) 1/2 cup over apricot preserves. Beat six egg whites until stiff, fold in remaining 1/2 cup sugar. Fold in rest of nuts (1/2 cup). Bake at 350 degrees for 30 minutes. This is a Hungarian family recipe and quit e good. Cut into serving pieces. Makes 1 1/2 dozen. |
