FRUIT COCKTAIL CAKE 
1 (29 oz.) can fruit cocktail, drained
1 1/2 c. unsifted flour
3/4 tsp. baking soda
3/4 c. packed brown sugar
1 c. sugar
1/2 c. chopped nuts
1 egg
1 tsp. salt

Combine fruit, sugar and egg; beat well. Stir in flour, soda and salt, mixing well. Spread in 8-inch square glass baking dish, greased on bottom only. Sprinkle with nuts and brown sugar. Microwave, uncovered, 9 to 10 minutes or until cake is no longer doughy, rotating dish 2 or 3 times. Makes 8-inch square cake.

Since microwave ovens vary in power, you may need to adjust your cooking time.
