COWBOY BEANS 
1 lb. pinto beans
1 med. diced onion
2 cloves garlic
1/2 lb. finely choped beef fat
Salt and pepper to taste

Wash beans then boil beans in 8 cups of water for 2 minutes, covered. Remove from heat for 1 hour. Add rest of ingredients and simmer 3 to 4 hours. Serve with cornbread.

I don't know why you call these cowboy beans. I have lived on ranches all my life and these things don't even come close. You need a big onion, a ham hock with lots of meat on it to start. Then season with salt, pepper, garlic and sometimes peppers. Cook till soft. I'm just sayin'.
