COWBOY PINTO BEANS 
2 c. pinto beans
4 c. water
3 cloves garlic
1 onion
1/2 lb. salt pork (cubed)
1 can Ro-tel tomatoes
Salt and cayenne red pepper, to taste

Soak beans overnight to shorten cooking time. Combine all ingredients except salt and cayenne pepper. Bring to boil, reduce heat, cover and simmer several hours until soft and creamy. Season with salt to taste and cayenne red pepper.
