CRUMB-COATED CHICKEN 
2 eggs
1/3 c. melted butter
1 tsp. salt
1 1/2 c. HiHo Crackers, crumbled
1 (2 1/2 lb.) chicken, skin removed

In small bowl beat together eggs, butter and salt. Place cracker crumbs in shallow baking dish. Coat chicken with cracker crumbs, then egg mixture, then cracker crumbs again. In 12 x 8 x 2-inch dish arrange chicken with the meatier pieces to the outside edge of dish. Cover with wax paper. Microwave at high 18 to 22 minutes. Rotate dish 1/2 turn after 10 minutes. Let stand about 5 minutes before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
