SPLIT PEA SOUP 
2 c. dried split peas
2 qts. water
1 ham bone, ham pieces
1 c. minced celery
1 med. onion, finely chopped
1 sprig parsley
1/4 tsp. pepper
2 carrots, peeled & diced
2 sm. potatoes, peeled & diced

Heat peas and water to boiling; boil gently for 2 minutes. Remove from heat. Cover and let sit for 1 hour. Add other ingredients and heat to boiling. Reduce heat and simmer 2 to 3 hours or until peas are soft.
