PINEAPPLE UPSIDE DOWN CAKE 
2 tbsp. butter
1 c. brown sugar
1/2 c. milk
1/2 c. butter
1 can pineapple (15 oz.) crushed, cubed or sliced
2 c. flour
2 tsp. baking powder
2 eggs, separate yolks & whites

Melt 2 tablespoons butter in medium large skillet. Add 1 cup brown sugar and mix well. Warm mixture. Add 1 can pineapple.

Batter: Cream together 1/2 cup butter and 1 cup white sugar. Add 2 beaten egg yolks and 1/2 cup milk. Blend 2 cups flour and 2 teaspoons baking powder and add to the creamed mixture. Last - add the beaten egg whites, folding in well. Add 1 teaspoon vanilla.

Pour this over the pineapple mixture and bake in moderate oven (350 degrees) until cake is browned and cake is done. Turn upside down on large platter or cake plate. Serve with whipped cream.
