UPSIDE DOWN PINEAPPLE CAKE 
5 tbsp. butter (only butter!)
1 c. light brown sugar
1 can drained pineapple slices
3 eggs
1 1/2 c. sugar
1 1/2 c. flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. vanilla
1/3 c. mix of water and pineapple juice

Melt butter and brown sugar in 13x9 inch pan in low oven; place pineapple slices on top of melted mixture. Beat eggs until light. Add sugar slowly. Sift flour, salt and baking powder. Add to egg and sugar mixture alternating with water. Mix well, add vanilla. Pour over melted mixture. Bake 45 minutes in 350 oven. FLIP OUT ONTO SERVING TRAY IMMEDIATELY!

Place 1 whole walnut or pecan in ring of pineapple slices.
