EASY CHICKEN POT PIE 
6 tbsp. melted butter
2 c. chicken broth
1 c. frozen peas
2 c. cooked, cubed potatoes
1/2 c. milk
Salt and pepper to taste
3 tbsp. flour
2 c. cubed chicken
1 c. cooked, sliced carrots
1 1/2 c. dry biscuit mix
1 onion, chopped

Melt 3 tablespoons butter, stir in flour, cook 1 minute. Add broth gradually, stir until thickened. Add chicken, carrots, peas, potatoes, onion, salt and pepper. Spoon into shallow baking dish.

Combine biscuit mix. Cut in 3 tablespoons butter. Stir in milk. Pat out dough 1/2 inch thick on floured board. Cut into circles. Arrange over chicken mixture. Bake at 400 degrees for 25 minutes or until biscuits are nicely browned. Serves 4.
