SCALLOP 'N' CHEESE BROIL 
7 oz. sea or bay scallops
1 tbsp. lemon juice
1 tsp. butter, melted
Dash each salt and pepper
1 oz. Swiss, Monterey Jack, or Cheddar cheese, shredded

Preheat broiler; in broiler pan combine scallops, lemon juice, and butter, tossing to coat scallops. Spread scallops in a single layer in pan and sprinkle with salt and pepper; broil until golden, 2 to 3 minutes. Sprinkle with cheese and broil until cheese is melted and browned, 1 to 2 minutes; serve immediately. (Makes 2 servings, 162 calories per serving, 3 P, 1/2 FA.)
