SANDRA'S MARINATED - BROILED
SCALLOPS
 
1 lb. bay scallops
1/2 c. white wine
1/4 tsp. garlic powder
Juice of 1/2 lemon
Sprinkle of parsley (fresh or dried)
Sprinkle of Italian flavored bread crumbs
Grated Parmesan cheese

Mix wine, garlic powder, lemon juice and parsley. Place scallops in pyrex baking dish (shallow). Pour wine mixture over top of scallops. Marinate scallops in mixture at least half an hour. Sprinkle bread crumbs and Parmesan cheese over top of scallops and wine mixture. Broil for 8-10 minutes. Very good served over rice.

Wow. That's all i can say! Wow. I substituted fresh chopped garlic and was extra generous with the parsley (fresh), bread crumbs, and parmesan. I wasn't sure I had enough scallops, so I added a few smallish shrimp, sliced in half long ways. And I served it over spinach linguini. The sauce -- to die for. Great recipe!!
