EGGPLANT CASSEROLE 
1 lg. eggplant, cubed
1 pkg. Stove Top Stuffing (chicken flavor, corn bread style)
1 stick butter
3 eggs, beaten
Grated Cheddar cheese

(Prepared according to directions). Parboil eggplant in salted water until tender - drain. Mix with all other ingredients except cheese. Pour into greased casserole dish and cover with grated Cheddar cheese.

Bake in moderate oven until hot through and cheese is melted (about 30 minutes.)
