OATMEAL CRISPS 
1 c. soft butter
1 1/2 c. sugar (plus a little, about 1 tbsp.)
1 egg
2 c. flour
2 tsp. baking soda
1 1/4 c. quick cooking oats

Cream butter and sugar, add egg and beat well. Stir together flour and soda. Add to creamed mixture. Add oats to mixture. Drop by teaspoons onto cookie sheet. Bake at 375 degrees for 10 to 15 minutes. Makes a light, crispy cookie. Yield: about 3 dozen cookies.
