LIZ'S BAKED SQUASH 
3 lbs. yellow summer squash
1/2 c. chopped onions
1/2 c. cracker meal or bread crumbs
2 eggs
1 stick butter
1 tbsp. sugar
1 tsp. salt
1/2 tsp. black pepper

Wash and cut up squash. Boil until tender, drain thoroughly, then mash. Add all ingredients except 1/2 of butter to squash. Melt remaining butter. Pour mixture in baking dish, then spread melted butter over top and sprinkle with cracker meal or bread crumbs. Bake in 375 degree oven for approximately one hour or until top is brown.
