AUNT FANNY'S BAKED SQUASH 
3 lbs. yellow summer squash
1/2 c. chopped onions (opt.)
1/2 c. cracker meal or bread crumbs
1/2 tsp. pepper (salt & pepper to taste)
2 eggs
1 stick butter
1 tbsp. sugar
1 tsp. salt

Wash and cut up squash. Boil until tender. Drain thoroughly, then mash. Add all ingredients except half of butter to squash. Melt remaining butter. Pour mixture in baking dish, then spread melted butter over top and sprinkle with additional cracker meal. Bake at 350 degrees for approximately 1 hour or until brown on top.
