AUNT FANNY'S PUMPKIN PIE 
3 PIES:

3 c. pumpkin
2 1/4 c. sugar
6 tbsp. flour
5 eggs
4 1/2 c. milk
3 tsp. cinnamon
3/4 tsp. nutmeg
1 1/2 tsp. salt
3/4 tsp. ginger
Unbaked pie shells

2 PIES:

2 full c. pumpkin
1 1/2 c. sugar
5 tbsp. (slightly rounded) flour
3 eggs
3 c. milk
2 tsp. cinnamon (level)
1/2 tsp. nutmeg
1 tsp. salt
1/2 tsp. ginger
Unbaked pie shells

Mix all ingredients together except milk. Beat well. Add milk. Stir thoroughly. Pour mixture into unbaked pie shells.

Place in preheated oven at 425 degrees. Bake for 10 minutes.

Turn heat down to 325 degrees leaving door ajar for a few minutes. Close door and bake until knife comes out of middle of pie clean.
