BAKED SQUASH 
3 lbs. yellow summer squash
1/2 c. chopped onions
1/2 c. cracker meal or bread crumbs
1/2 tsp. black pepper
1/2 tsp. salt
2 eggs
1 stick butter
1 tbsp. sugar

Salt and pepper may be increased or decreased to suit taste.

Wash and cut up squash. Boil until tender; drain thoroughly, then mash. Add all ingredients except 1/2 butter to squash. Melt remaining butter. Pour mixture in baking dish, then spread melted butter over top and sprinkle with cracker meal or bread crumbs. Bake in 375 degree oven for approximately one hour or until brown on top.
