HAMBURGER SOUP 
3 tbsp. butter
1 med. onion
1 1/2 lb. ground beef (lean)
1 can tomatoes
3 cans consomme
2 cans water
4 med. carrots, chopped
4 celery tops, chopped
4 sprigs parsley, chopped
1/2 tsp. thyme
10 peppercorns
1 tbsp. salt

Melt butter, add onion and celery. Cook until limp. Add beef and brown. Add remaining ingredients. Simmer until done. Serves 6 to 8.
