CUCUMBER - LEEK SOUP | |
Cucumber, cubed Leek (cut into rings) Tomato juice (to cover) Water (to cover) Green pepper (to taste), chopped Black pepper (to taste) Ratio 2 cups tomatoes to 1 cup water. Place ingredients into a pan. Cover and cook until cucumber is clear. May serve soup hot or cold. Optional: Serve hot with a spoonful of cream cheese and slice of bread on the side. |
