CUCUMBER - LEEK SOUP 
Cucumber, cubed
Leek (cut into rings)
Tomato juice (to cover)
Water (to cover)
Green pepper (to taste), chopped
Black pepper (to taste)

Ratio 2 cups tomatoes to 1 cup water.

Place ingredients into a pan. Cover and cook until cucumber is clear. May serve soup hot or cold. Optional: Serve hot with a spoonful of cream cheese and slice of bread on the side.

This made the most delicious soup, hot or cold. I substituted 6 whole fresh tomatoes for the Tomato juice and water, added 1/3 C of sherry, and one tiny chili pepper. Pureed it in my Vitamixer, served it 1 Cup soup:2 T cream...boy, was it ever great!
