TABBOULI 
3 c. boiling water
1 1/2 c. bulgar wheat
3/4 c. chopped fresh mint
1 c. chopped fresh parsley
3/4 c. chopped scallions
3 med. chopped tomatoes
1 to 2 minced garlic buds, optional
Fresh ground pepper, as desired
1/2 tsp. salt
1/4 c. fresh lemon juice
1/2 c. olive oil

Add wheat to boiling water and set aside to soak 2 hours. Drain well after soaking completed. Mix in all other ingredients. Refrigerate 24 hours before serving to allow flavors to marinate.
