CARROT CAKE 
1 1/2 c. Mazola or Wesson oil
3 c. grated carrots
2 c. sugar
4 eggs, beaten well
2 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
1/2 c. chopped nuts

Combine and bake in a tube pan. Bake 1 hour and 15 minutes at 350 degrees.

FROSTING:

1 pkg. Philadelphia cream cheese
1 c. powdered sugar
3 tbsp. cream
1 tsp. vanilla

Cream together and spread on cake. Sprinkle top with nuts.
