OUR FAVORITE MEATLOAF | |
1 (8 oz.) can tomato sauce 1/4 c. brown sugar 1/4 c. vinegar 1 tsp. prepared mustard 1 egg, slightly beaten 1 med. onion, minced 1/4 c. cracker crumbs 2 lbs. ground beef 1 1/2 tsp. salt 1/4 tsp. pepper Microwave on high. Combine tomato sauce, brown sugar, vinegar, and mustard in a small bowl. Set aside. Combine egg, onion, cracker crumbs, ground beef, salt, and pepper in a mixing bowl. Add 1/2 cup of the tomato mixture and blend thoroughly. Shape into an oval loaf and place in an oblong baking dish. Make a depression in top of loaf. Pour remaining tomato sauce over top of meat. Cook uncovered for 18-20 minutes or until center of loaf is cooked. Cover meat and let stand about 10 minutes before serving. |
