PERSIMMON PUDDING 
1/4 c. butter
1 c. milk
1 egg
1 c. sugar
1/4 tsp. salt
1 tsp. baking soda
2 c. persimmon pulp
2 c. flour
1 c. chopped dates
1/2 c. chopped nuts

Cream butter, add milk, egg, sugar, salt and soda. Mix well, then stir in persimmon pulp. Stir in the flour, then blend in dates and nuts. Turn into a greased 9 inch square pan and bake at 325 degrees for 45 minutes. Delicious served with whipped cream.
