CORNBREAD SAUCE 
2 tbsp. butter
2 tbsp. all-purpose flour
1 1/2 c. milk
2 egg yolks, beaten
2 c. cubed, cooked chicken or turkey

In medium saucepan, melt butter. Blend in flour. Add milk, stirring constantly until mixture thickens and boils. Blend 3/4 cup into egg yolks. Stir back into saucepan. Stir in meat until thoroughly heated. Ladle over cornbread. 6 to 8 servings.
