MEXICAN CORNBREAD 
1 c. corn, drained
1 onion, chopped
1/2 lb. beef or turkey
1/2 lb. cheddar cheese
3 or 4 jalapeno
2 eggs or 1/2 c. egg substitute
1 c. milk
1 c. corn meal
3/4 tsp. salt
1/2 tsp. baking soda
1/4 c. oil

Brown meat and onions. Mix all ingredients together in large bowl, except cheese. Pour 1/2 mixture in greased casserole pan and sprinkle with 1/2 cheese. Place remainder of mixture in pan and top with remainder of cheese. Cook at 400 degrees for 45 minutes. Freezes well.
