FRIED GREEN TOMATO SLICES 
4 med. green tomatoes
1/2 c. unsifted flour
1 1/2 tsp. salt
2 eggs
1 c. flavored bread crumbs
1 tsp. sugar
Salad oil
1 tbsp. butter
1 egg
1/4 c. brown sugar, packed
3 tbsp. granulated sugar
3 tbsp. prepared mustard
1 tsp. paprika
1/2 c. vinegar

Slice tomatoes thin. Combine flour and 1/2 teaspoon salt. In a small bowl, beat eggs with sugar and rest of salt. Coat tomatoes completely in flour mixture, and dip into egg mixture and then in bread crumbs completely. Heat oil in large skillet and saute each until nicely browned. Add oil as needed. Serve with mustard sauce.

SAUCE: Melt butter in saucepan and set aside. Mix well all other ingredients and mix. Add vinegar, mix again. Cook over low heat until mix thickens.
