CHOCOLATE PEPPERMINT BARS 
4 eggs
2 c. sugar
1 c. cocoa
1 c. flour
1/2 tsp. peppermint extract
1 tsp. vanilla
2 sticks melted butter

Beat eggs and sugar by hand until thick. Add cocoa and flour. Mix well. Add flavoring and butter. Spread in a greased 9x13 pan. Bake 350, 15 minutes. Do not overbake.

FROSTING:

2 3/4 c. powdered sugar
1 stick butter
1/2 tsp. peppermint extract
2 drops food coloring (optional)
Milk

Beat butter and powdered sugar. Add peppermint extract. Add enough milk to obtain desired consistency for spreading over base. Spread on base and let set until firm.

COATING:

2 (1 oz.) sq. unsweetened chocolate
2 tbsp. butter

Melt together. Spread on mixture with a brush. Sprinkle with ground nuts if desired.
