CUCUMBER SALAD | |
3 (8 inch) cucumbers 3 tbsp. lemon juice 1 1/2 tbsp. vegetable oil 3/4 tsp. salt 1/4 tsp. pepper 1 1/2 tsp. Dijon mustard 1 1/4 tsp. crumbled tarragon 7 green onions 3 tbsp. chopped parsley Wash cucumbers, pare thinly and cut in half crosswise. Remove seeds by piercing core of cucumber all the way through with a sharp paring knife. Use dull side of blade, twist within the core until all seeds are removed. Slice cucumbers thinly. Combine lemon juice, oil, salt, pepper, Dijon mustard, parsley, tarragon, and green onion in small bowl. Whip with fork until well blended. Pour dressing over cucumbers. Marinate at least 1 hour in refrigerator before serving. |
