CUCUMBER SALAD 
2 cucumbers, sliced
1 lg. Vidalia onion, sliced
1/2 c. water
1/2 c. cider vinegar
2 tbsp. vegetable oil
2 tbsp. dried parsley
Salt & pepper
Mayonnaise, optional

Combine cucumbers and onions in large bowl. Whisk together remaining ingredients and pour over vegetables. Marinate in refrigerator 2-3 hours or overnight. To serve drain marinade from vegetables and top with small amount of mayonnaise, salt and pepper if desired.
