CHAIN GANG CHILI 
2-3 lb. lean ground beef
4 c. chopped onions
6 cloves garlic, minced
1 lg. green pepper, chopped
3 tbsp. chili powder
1 tbsp. plus 1 1/2 tsp. all-purpose flour
4 tsp. salt
1 tbsp. sugar
1 tbsp. ground cumin
1 tbsp. ground coriander
1 tbsp. dried oregano leaves
1-2 tsp. crushed red pepper
2 (16 oz.) cans whole tomatoes, chopped
1 (15 oz.) can tomato sauce
1 (8 oz.) can tomato sauce
1 (6 oz.) can tomato paste
3 (16 oz.) cans red (Hanover brand) kidney beans
1 (1 oz.) sq. unsweetened chocolate

In a large Dutch oven or slow cooker, brown ground beef. Add onion, garlic and green pepper. Cook until vegetables are tender. Add spices, sugar and tomato products. Reduce heat and simmer, covered for 1 hour. Stir occasionally. Stir in beans and chocolate. Simmer covered for 20-30 minutes. Stir well before serving. Note: Prepared chili may be frozen up to 2 months.
