SOUTHWEST CORN CASSEROLE 
2 10-oz cans Green Giant Niblets corn (do not drain)
1 Tbs butter
2 Tbs chopped green chile (to taste)
1/4-1/3 c cream
2-3 rounded Tbs Marie Calendar's corn bread mix
2 dashes chipotle seasoning (opt)
shredded cheddar cheese (opt)

Puree one can of corn in blender. Mix all ingredients in a sauce pan. Simmer until thickened, stirring occasionally (15-20 minutes on low).

Serve or transfer to a baking dish once thickened and top with shredded cheddar cheese.

Bake at 325-350 until cheese melts and bubbles around the edges.
