TURKEY MEATBALL STEW | |
1 lb. ground turkey 1/2 c. seasoned dry bread crumbs 1 egg 2 tbsp. oil 2 pkg. (7/8 oz.) turkey gravy mix 2 c. water 1 bay leaf 1 (10 oz.) box frozen whole baby carrots 1 (10 oz.) frozen cut green beans 1 (12 oz.) corn (other frozen vegetables or your choice can be substituted) 4 c. cooked noodles 1. In a large bowl combine turkey, bread crumbs and egg. Mix gently until well combined. Shape into 1 inch meatballs. 2. In large heavy skillet or Dutch oven heat oil over medium heat. Add as many meatballs as will fit in pan without crowding. Cook, turning to brown on all sides. Remove meatballs to paper toweling to drain. 3. When all meatballs are browned, discard fat. Add gravy mix, water and bay leaf. Bring to a boil, add meatballs and reduce heat. Cover and simmer 15 minutes. Add carrots and beans (or other veggies) and simmer, covered 8 minutes. Add corn and heat through. Discard bay leaf. 4. Serve over hot noodles. |
