TURKEY LASAGNA 
1 sm. onion, chopped
2 lb. ground turkey
32 oz. spaghetti sauce (jar or home recipe)
1 1/2 lbs. low or no fat ricotta cheese
1 egg, beaten
1 pkg. frozen spinach, thawed & drained
1 lb. lasagna noodles
3 c. shredded Mozzarella

Boil lasagna noodles. Drain and set aside. Brown ground turkey with chopped onion in Dutch oven. Drain fat. (Rinse with boiling water to remove extra fat.) Add sauce to turkey and simmer. Beat 1 egg in bowl. Mix in ricotta cheese and well drained spinach. In large pan layer noodles, ricotta mixture, sauce and Mozzarella. Bake at 375 degrees for 45 minutes or bubbling.
