GREEN TOMATO RELISH 
6 c. coarsely chopped green tomatoes
2 c. coarsely chopped onion
1 tbsp. salt
1 c. sugar
3/4 c. white vinegar
1 tsp. mustard seed
1 tsp. celery seed

In large saucepan, combine onion, salt, sugar, vinegar and mustard seed; bring to a boil. Add the tomatoes; cook just until they begin to look "transparent." Pour into hot, sterilized pint jars and seal.

This tastes like the green tomato relish served at catfish restaurants.
