CRANBERRY PORK CHOPS | |
4 (3/4 inch) pork chops 1 tbsp. vegetable oil 1/4 tsp. salt 1/8 tsp. pepper 1 (8 oz.) can pineapple slices 1/2 c. hot water 1/2 c. whole-berry cranberry sauce 1 chicken-flavored bouillon cube 1 sweet red or green pepper, cut into rings 2 tbsp. brown sugar Brown chops in oil in large skillet. Drain pan drippings; sprinkle chops with salt and pepper. Drain pineapple, reserving juice. Set pineapple aside. Combine juice, hot water, cranberry sauce, bouillon cube and brown sugar. Pour mixture over chops. Cover and simmer 20 minutes. Place pineapple slices and pepper rings on top of chops. Cover and simmer an additional 10 minutes. Transfer chops, pineapple and pepper rings to serving platter. Pour pan drippings over chops. (May thicken drippings with cornstarch if desired.) Serve immediately. A very attractive company dish. |
