FRUITED PORK CHOP & RICE SKILLET 
6 (1/2") pork chops, lean
1 cooking spray
1 c. apple juice, unsweetened
3/4 c. chicken broth
2 tbsp. soy sauce
1 tsp. ginger, ground
1 tsp. prepared mustard
1/4 tsp. salt & pepper
2/3 c. rice, reg., uncooked
1/4 c. raisins
2 sm. cooking apples

Trim excess fat from chop; brown in vegetable spray; pat dry. Wipe pan drippings from skillet with paper towel, return chop to skillet. Add next 7 ingredients; cover and simmer 20 minutes. Add rice and raisins to skillet, put chop on top of rice. Cover and cook (simmer) 20 minutes more. Core, slice crosswise apples. Arrange on top of chops until tender, crisp and liquid is absorbed.
