TEXAS BEEF SKILLET 
3 lbs. ground beef
2 c. chopped onions
3 (16 oz.) cans tomatoes, cut up
3 (15 oz.) cans kidney beans
1 1/2 c. quick cooking rice
9 tbsp. chopped green pepper
4 1/2 tsp. chili powder
1 1/2 tsp. garlic powder
1 1/2 c. water
1/2 tsp. salt
2 1/2 c. grated cheese

In a skillet cook ground beef and onion until meat is browned and onion is tender. Drain fat; stir in undrained tomatoes, kidney beans, uncooked rice, green pepper, chili powder, garlic powder, water and salt. Bring to boil and reduce heat. Simmer, covered 20 minutes, stirring occasionally. Top with cheese.
