CANDIED NUTS 
2 1/2 c. pecan halves or 2 1/2 c. English walnuts
1 c. sugar
1 tsp. cinnamon
1/2 c. water
1/2 tsp. salt
1 1/2 tsp. vanilla

Cook sugar, cinnamon, water, and salt to soft ball stage (236 to 240 degrees); do not stir. Remove from heat. Add vanilla and nuts. Stir until creamy. Pour on wax paper. Cool and separate.
