CHINESE BEEF & PEPPERS 
3/4 lb. boneless chuck (thin strips)
1 lg. onion, sliced (1 c.)
1 clove garlic, minced
1 tbsp. oil
3/4 tsp. ginger
1 c. green (and or red) pepper strips
3 tbsp. soy sauce
1 1/2 c. Minute Rice
1 1/2 c. beef bouillon or 2 beef cubes in 1 1/2 c. water

Saute beef, onion and garlic in oil in a large skillet until meat is browned. Add ginger, green pepper, bouillon, soy sauce. Bring to a boil, stir in rice, cover and remove from heat and let stand 5 minutes. Makes 5 cups or 4 servings. Less than 350 calories each.
