1/2 c. mashed potatoes
1/8 tsp. salt
1 lb. confectioners' sugar
1/2 tsp. vanilla
1 c. peanut butter

Gradually stir in salt and enough sugar in the potatoes to form an easily handled dough. Add vanilla. Roll half the mixture 1/2 inch thick. Spread with peanut butter and roll up like jelly roll and chill.
