SCALLOPED CORN AND CHEESE 
1 (16 oz.) cream style corn
1 c. crushed cracker crumbs
1/2 c. chopped celery
1/4 c. chopped onion
2/3-1 c. shredded American cheese
1 tsp. salt
2 eggs, beaten
2 tbsp. melted butter
1/4 tsp. paprika
1 c. milk

Combine all ingredients and mix well. Pour into greased 1 1/2 quart casserole and bake in 350 degree oven for 50-55 minutes. Knife inserted in center should come out clean.

Note: You may add 1/4 cup chopped green pepper, 1 small jar pimento drained and 1 can (4 ounce) mushrooms if desired.

I double the recipe for my family and put in a 9 x 13 inch pan.
