SCALLOPED MIXED VEGETABLES WITH
CHEESE
 
1 head cauliflower cut in flowerets
1 lb. fresh peas, shelled or frozen
3 carrots, diced in sm. cubes
1/2 lb. boiling onions (or canned & drained)
3 c. milk
2 tsp. butter
4 tbsp. whole wheat pastry flour
2/3 c. sharp Cheddar cheese

Steam all vegetables separately until half done. Drain and put in baking dish. Combine remaining ingredients and pour over the vegetables. Sprinkle with paprika. Bake uncovered at 350 degrees until tender and starting to brown around edges. Serves 8.
