SCALLOPED VEGETABLES 
1 (20 oz.) pkg. frozen mixed vegetables
8 oz. Velveeta cheese
1/2 stick butter
20 Ritz crackers
2 tbsp. butter
1/2 onion

Cook frozen vegetables mixed with 1/2 onion. Drain. Add 8 ounces Velveeta cheese, grated and 1/2 stick butter. Mix all together. Crush Ritz crackers and mix with melted butter. Pour vegetable mixture in dish. Top with cracker crumbs and bake 25 minutes at 350 degrees.
