SHRIMP IN BEER BATTER 
1 c. enriched flour
1/2 tsp. sugar
1 tsp. salt
2 eggs
1/2 c. ice water
1/2 c. cold beer (Schafer)
Tbsp. butter or salad oil
2 lbs. fresh shrimp, cleaned

Combine ingredients (except shrimp). Beat well. Split and dry shrimp thoroughly. Dip into batter. Fry in deep fat at 375 degrees until golden brown. Drain on absorbent paper. Serve immediately.

Can be used on any fish. Keep batter chilled until used. Serves 6.
