REBECCA'S FAMOUS VANILLA
PANCAKES
 
1 1/2 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
3 tbsp. sugar
3/4 cup water
3 tbsp. butter, melted (will still taste amazing without)
6 oz. vanilla yogurt (I use non-fat)
3 eggs

OPTIONAL TOPPINGS:

1 3/4 cups sliced fresh strawberries (these taste really great)
your favorite pancake syrup

Spray griddle or pan with cooking spray and turn heat up to medium (375°F).

Mix together all dry ingredients, flour, baking powder, salt, baking soda, and sugar.

In a separate bowl mix together all the rest of the ingredients; water, butter (if desired), yogurt, and eggs. Pour the dry ingredients into the wet ingredient bowl and mix until moistened (don't over mix or they won't turn out just right).

Using a 1/4 cup measure pour pancake mix onto griddle. Cook for approximately 1-2 minutes or until it is bubbly on top and flip to other side, then cook for another 1-2 minutes or until done.

Serve with fresh cut strawberries and syrup, if desired.
